I bought these knives from Bed Bath & Beyond, not here on Amazon so my review applies to those knives. I've been told that because of the number of fake Zwilling knives out there, you should make sure to buy from a brick and mortar store, or at the least, double check to make sure the online buyer is an authorized retailer or a large company.First of all, the knives are very well balanced. They have a decent weight to them but not too heavy and being perfectly balanced, they feel feather light when using.Second is the unique bolster, or perhaps lack of typical bolster. The blade edge runs the entire length of the blade, it doesn't stop towards the handle which is great because it allows you to sharpen the entire blade edge. This is important on high-end knives like these because they last so long and after many years of sharpening, if your knife has a blade edge that can't be sharpened the entire length of the blade, that area could eventually cause the part of the blade closest the handle to stop making contact with your cutting board. With these knives you don't have that problem.Another great feature of the bolster area is the unique way it curves from the blade into a nice, thick piece of steel, the same width of the handle, which then meets up with the handles. This creates a VERY durable knife and the best part is, it allows you to hold the knife using the professional "pinch grip" very easily which is perfect for seasoned chefs who have been trained to hold and use knives this way.I have used the Twin Pro "S" knives from Henckel (which I believe these are ultimately replacing) and I really like the feel of these better. I've been trying to confirm that these knives will be replacing the Twin Pro "S" series but haven't heard back from Henckel yet. I want to make sure this series will continue so I can add the rest of the knives I need to my set.Ultimately, you will not be disappointed with these knives. Talk to any professional chef and ask them what the best knives are and 9 times out of 10 they'll tell you Wustoff and J.A. Henckel. They are expensive but you will own them the rest of your life and probably even ben able to pass them down to your children or grandchildren.
