Sakai Takayuki 18 cm./7" blade santoku made in Japan. The stainless blade is 17 layers Damascus hammered steel with a VG10 alloy core. VG10 is a vanadium containing steel. Vanadium adds to wear resistance and hardness. This allows the blade to have a very sharp edge.HRC 60. Handle is desertwood.

Best Santoku I've used

I received my Sakai Takayuki Santoku about a month ago. This knife has quickly become one of the most important tools in my kitchen. I'm not a professional chef but I am a self-proclaimed foodie / home-cook who knows his way around a kitchen. This knife came out of the box with a perfect razor-sharp edge. Balance and ergonomics are the best I've used but uncomplicated. It has a traditional western feel to it with the squared edges on the handle which I prefer to the eastern rounded handles. The 18cm is a great length for me as I use this santoku for everything from veggies to cutting up a whole chicken. The weight and balance are also a great fit - only real description I can say is it's light enough and heavy enough. I can slice veggies quickly with fluid and accurate movements but can quickly move over to cut meat (and bone) with power and the least resistance. I've tried Shun, Tamahagane and numerous German brands but this will be in my kitchen for a very long time.
