This new SHUN CLASSIC flexible fillet 7", works great, with all kinds, of fish . the flexibility of the blade, helps to get the cut , down to the bone, for efficient, non wasteful, knife work. The Japanese AUS8A steel in the blade , and the fact that the blade is not Damascus coated ,give the knife a flexibility and strength ,for the long haul. I love the way it feels in my hand. It takes ,only a few strokes, on the SHUN steel, to get it back to razor sharp , after many uses. I give this knife my highest recommendation , for Flexibility , blade strength . and quality of steel, used in blade. I hope this review ,helps you make an informed buying decision.

I'm a big fan of Shun....but not this knife, it was too flexible. You can bow it with your little finger. And get a "tin" ring out of it when you let it go.
